Mathieu, creamer-cheesemaker, and Nicolas, farmer-cheesemaker at the Bois Joubert farm in the Marais de Brière, opened their store in April 2022 in the Copernic district. In the window of Racines, passers-by can contemplate the range of cheeses maturing in their cellar: Basque ewe's milk tommes, abondance fermier, gouda mayennais, Ronde des Marais, Sort-Palud... Cheese nuggets made from organic raw milk of local breeds, delivered directly from the farms. You can also find Gwell, a Breton dairy speciality, as well as Corsican bruccio, in season. Mathieu and Nicolas pass on their passion and their wise advice for the choice of wines and ciders. There are also some great finds in the grocery store.
