It is in the middle of the market, near an outside door, that you will find the superb stand of the well-known cheese dairy Pascal Beillevaire. The customers are numerous to admire and to taste the best of the local and national cheese production thanks to a rigorous and constant quality of its good products. This cheese producer and creamer since 34 years in Machecoul, rather top-of-the-range, manufactures butters, creams, white cheeses, yoghurts, milky desserts (chocolate mousse, rice pudding, the famous cremet nantais, the big Swiss...) and gingerbread which made its reputation. Ludovic Condroyer is the manager of the Talensac shop. He and his team treat no less than 100,000 customers per year. Very demanding on the quality of their products, they regularly visit producers from other regions. Here, artisanal farmhouse cheeses take pride of place, as well as local producers: raw milk cheeses, Machecoulais, Pont d'Yeu, Grands Causses, Livarot and many other appellations for all tastes and budgets. You will even find ghee (clarified butter) for cooking, and Roellinger spices that will enhance a plain yoghurt. Every week specialities are prepared on the spot: truffade, aligot, tartiflette of all kinds... croziflette, chevriflette, chtififlette... what a treat!
