He uses raw milk from which he knows the origin, formally rejects productions with chemical colorants, enhancers of any kind, stabilizers of any form and puts forward a natural cellar maturing "in the old way". Creator of the Saint-Omer camembert, he also offers the Clairmarais tome or the maroilles from his abbey, and many other regional flavors.
