The duck and goose foies gras produced by this august firm have earned an outstanding reputation throughout the Marmand area. Founder Serge Poletto has passed on his expertise to his daughter Nathalie. Here, duck is available in confits, boudins, paupiettes, tournedos, roasts and even chorizos. Petit Futé recommends figs stuffed with foie gras. The house duck burger - a delight! - is available on Thursday evenings by reservation. Maison Poletto also makes preserves, including a country terrine with shallots that will make your aperitifs unforgettable.
