Stéphane works with passionate local producers to create crunchy galettes that follow the seasons, like the one with cold-smoked trout, sliced to order, or the galette de l'Arros with goat's crottin with wild garlic, specially created by a farm in the Baronnies. Don't forget to accompany it with a bowl of cider or a good beer! And for those with a sweet tooth, the Pailhasson chocolate crepe, from Tarbes' renowned chocolatier, will melt your taste buds.
