As for the essentials, the rib steak in pure butcher's pieces, the homemade semi-cooked liver with thyme or the Gascony salad with fricassee of hearts and duck gizzards are perfect. Fresh products are favoured by a bold chef who reserves beautiful innovations such as the Burger Ardoaz: cereal bread, onion compote, bacon, sheep's cheese and steak, excellent. We appreciate the chipirons, the rich parillada of pig or the trout steak accompanied by a pumpkin purée, beautiful creations. Homemade chocolate fondant or a plate of Pyrenean sheep's cheese complete an exquisite meal.
