The chef doesn't hesitate to shake up traditions, describing his cuisine as "traditional sublimated". For example, the César salad features a Tarbais bean stew, confit pig ventrèche and duck aiguillettes; or the Pyrenean hummus combines chickpea hummus and chorizo from Porc Noir de Bigorre. For those with a sweet tooth, the fruit entremets with pistachio cookie are exquisite.

sérieux problème de climatisation gros coup de chaleur en entrant dans le restaurant…il faisait tres tres chaud on aurait dit que la clim etait en position chauffage..malgré les explications du serveur il faisait meilleur dehors
