Historically, the concept was that of the table d'hôte: starters placed on tables, dishes of the day simmering on the stove, plates waiting in grandma's cupboard. Keen to adapt to new constraints, Alain now serves his guests by the plate, but strives to remain in the spirit of the place: all-you-can-eat service and intact conviviality!
