The basic ingredient isinjera, a thin wafer made with teff flour (gluten-free, in other words) and topped with a variety of ingredients: sauces, vegetables, legumes, cottage cheese, with or without meat... Other options: yeshekla tbes, a preparation of strips of grilled meat presented and kept warm without its pretty clay pot, or ktfo, a beef tartar with Ethiopian spices. Original and picturesque!
