In the center of Casteljaloux, a brasserie-style restaurant offering sophisticated cuisine with Basque accents.
Long owned by Catherine and Rémy Fusaro, Le Cassissier restaurant was taken over in summer 2023 by their son Yoann and daughter-in-law Amandine. The new look is reflected in a trendier name (Le Cass') and a revisited bistronomic menu. There are pronounced Basque touches such as Espelette pepper jelly in the goat's cheese salad, ewe's milk cheese and cherry jam with the duck leg confit, and Izarra liqueur custard with the chocolate fondant. An effort that is paying off in perpetuating the family business.
