Guy Vialis's cutlery shop takes over a very old traditional manufacturing. In fact, the manufacture of knives has been documented in the house since the th century. This craft has declined from the th century and lost without the opening of this workshop. We are witnessing the manufacture of the "Sauveterre", knives with straight lines, sober, whose sleeve now stands in traditional materials and new composite materials. Guy Vialis also developed the Château-Laguiole, composed of a 5-mesh threaded tendrilless, an unveiled lever and a small micro-timing curve.
