In the spring of 2023, Emilie and Thomas, who many imagine to be the next starred chefs in Aveyron, took over Le Moulin de Cambelong in Conques. Their culinary adventure in this magical setting is an extension of what the couple have already achieved in their restaurant in Ruthénois. The two chefs interpret their desires around seasonal produce and the principles they hold dear: terroir and local organic farming. On their plates: a cuisine they describe as instinctive and responsible, free and on the move.
