A former cowshed converted into a restaurant in the late 70s, Le Buron de la Sistre offers a unique menu that has remained virtually unchanged for over forty years. It has to be said that the specialties of Aveyron are timeless, not to say iconic. Charcuterie, farçous, aligot-saucisse and Ana's famous tarte are served every lunchtime and Thursday evening in summer. Ana, Charles, Jeanne and Benjamin welcome guests here with the same authenticity and generosity as their predecessors, with an emphasis on homemade and local produce.

Trop heureuse de la reouverture de ce buron où l'aligot est aerien, la saucisse delicieuse... meme le pain trop bon. l'accueil est souriant et chaleureux et le service impressionnant d'efficacite.

Aligot pourrait mieux faire. Celui de Monsieur Ramon était meilleur. Les jeunes qui ont repris sont formidables d'une gentillesse exemplaire

Un excellent moment dans ce buron , tout y est: bonne ambiance (surtout avec la brume et la pluie), nourriture excellente et copieuse, service enjoué et efficace..
