Founded in the 1960's, Jeune Montagne is the guardian of the traditions and the land of Aubrac. Composed of 76 producers and 90 employees, it collects 15 million litres of milk each year, which is processed directly in its workshops. Heir to the know-how of the monks and buriers of yesteryear, the cooperative makes raw milk cheeses: Laguiole PDO, matured for between 4 months and 2 years, and fresh Aubrac tome cheese, which is used to prepare the famous aligot and truffade.
