Founded in the 1960's, Jeune Montagne is the guardian of the traditions and the land of Aubrac. Composed of 76 producers and 90 employees, it collects 15 million litres of milk each year, which is processed directly in its workshops. Heir to the know-how of the monks and buriers of yesteryear, the cooperative makes raw milk cheeses: Laguiole PDO, matured for between 4 months and 2 years, and fresh Aubrac tome cheese, which is used to prepare the famous aligot and truffade.

la coopérative organise une visite très intéressante (avec petit film) pour expliquer la fabrication du fromage AOP Laguiole, cette visite se termine par une dégustation avant d’accéder à la boutique où on peut se ravitailler en AOP Laguiole donc mais aussi en Aubrac (le vieux est un régal) et en spécialités locales, notamment la truffade, excellente.

Visite découverte intéressante sur les techniques de fabrication du laguiole, fromage aveyronnais cousin du cantal. Le plus : à la fin de la visite des ateliers à travers un couloir vitré, possibilité de dégustation et d'achat de fromage à différents stade de viellissement.

A very interesting visit to discover the modern production of cheese passing in front of exhibitions of old equipment. The shop offers cheese to all tastes, see dishes (aligot) prepared and right to heat.
Small a one-hour old stop is sufficient.
