Cuisine prepared by Cédric Bertaux in a gourmet restaurant in Metz.
La Quintessence is first and foremost the chef Cédric Bertaux. Coming from a farming background, he developed a real love for the land from his grandmothers. The products he makes come mainly from the Moselle's gastronomic territories and from all its small producers. Concocted in front of you in an open kitchen, a mastered score is played on the piano. The wine list is judicious. You can choose the surprise menu, created according to the chef's inspiration and the products of the moment. The impertinence is measured and the creation successful. Bravo !

Menu 4 services intéressants, des goûts, des produits de saison. Petite déception sur les desserts qui manquent de saveurs.

Restaurant gastronomique à la Hauteur de notre attente. Les fruits et légumes de saisons, comme le petit marron, la pomme, ka pire, ect... sont mis à l'honneur dans une cuisine gastronomique relevant leurs goûts automnales pour exalter nos papilles. Expérience culinaire à découvrir

Nous avons choisi avec mon compagnon le menu surprise en 4 plats et nous n'avons pas du tout été déçu. Les ingrédients sont de saisons et de qualités. Le service était parfait, les serveuses très aimables. Petit plus pour les miniardises à emporter offertes à la fin du repas. Nous y retournerons sûrement!

went on a Monday for lunch and didn’t have a reservation, but thankfully I was still able to get a spot. food and service was great! started strong with the amuse bouche until the end with the citron tart (this one was very generous, it could have been for 2 ppl????)

The fish terrine was to cold to be tasty.
The fresh fish (baudroie) was really nice.
