Didier Cotte is an emblematic figure for agriculture in Upper Limousin. Known and recognized for its quality craft production, it traditionally elevates 7 000 farm birds (chickens, guinea fowl) and fat, grain and open-air ducks. He transforms them into his studio into ready-to-cook, canned and delicious meats, rillettes and candied. We buy directly from the farm, from the region's markets, to the central places in Limoges and to the tables of the best restaurants. President of the Brotherhood of Capons who promotes the qualities of the chapon, it is therefore under his leadership every year the Capons de faire. Didier Cotte also organizes the transformation of the fatty duck on his farm.
