His original recipes explore the richness of Mediterranean - or even Asian - culinary art, sublimated by fresh and local products. As he himself says, "I like my cooking to be as fluid and clear as olive oil". The presentation on the plates is fine-tuned and worked on down to the last detail. One admires before feasting, it is a festival of colours and flavours. Very good value for money at lunch.
