Sébastien Colombier and Sarah, his wife, have succeeded in bringing new life to a well-known former hotel next to the Rivesaltes train station. A little over a year's work has gone into completely rethinking the premises, from the kitchen to the dining room and the terrace. Sébastien offers market cuisine using local, seasonal produce. Farmers, arboriculturists, local fishing with line-caught fish, meat from local livestock. Inventiveness and creativity, while retaining the taste of the product, reasonable prices, all served with Sarah's smile.
