Restaurant offering an inventive cuisine based on local products.
Things are moving in Banyuls. Not on the seafront, but in a charming pedestrian street off the beaten track. Aurélien, a chef by trade, is a real magician in the kitchen. It's very good and very fine but what seduced us was the mix of cuisines and flavours: a declaration of love to France and Spain. The menu changes regularly and the name of each dish is like an alexandrine. The cuisine is offbeat and daring, based on local products and fine craftsmanship. The Quintessence claims to be an inventive cuisine, and we would add passionate!

Le service est globalement bon.
L’ambiance est plutôt conviviale.
Prix entré-plat 39€, c’est cher pour ce que c’est.
Des mets copieux mais avec trop de sauce. Un "pichet" de sauce pour saucer à notre convenance serait plus approprié.
Les légumes qui accompaient le thoni mi-cuit n'étaient pas du tout de saison, sauf les courgettes qui était bouillies.
Un poulpe un peu trop cuit.
Le service était quelque peu chaotique car la mise en place des tables n'était pas correcte (manque verres à vin, couverts...), du coup on entend le chef s'engueuler avec les serveurs.
Les tarifs sont du coup excessifs pour le moment, surtout pour le vin (+ de 70€/pers).
Dommage car on sent que le chef a du talent.
