In his three butcher's shops in Marvejols, Chirac and Saint-Chély, Christophe puts in the effort. First of all, all the meat is bought on the spot, in the nearby Aubrac and Margeride regions, then the animals are slaughtered at the Marvejols slaughterhouse: you couldn't dream of a shorter circuit.
