"Le Gallinace" is run by Laurent Busquet at the Halles centrales de Nimes. A poultry professional. Quails, Game, Kid of the Ardèche, Rabbit of the Ardèche have no secrets for him. At Christmas, capons, boneless turkeys stuffed with morels or foie gras with truffles or stuffed chicken are the kings of the festive tables. A must for Des Halles. Laurent travels the roads to obtain exceptional artisanal foie gras from small producers. Its stall also displays poultry pies or goose rillettes, which are a delight. Many of its products are labelled "Red Label" and come from production regions known for the quality of their livestock
