With twelve varieties of olives (picholine, leccino, white ass, aglandau, verdale in Carpentras, Lucca, cailletier, noirette, grossane, olivière, rougette, rougette of Ardèche and salonnenque), Mathieu Perrier has been offering 11 years of assembly and 100% picholine oil (in ripe and green fruit). Its 2 850 trees, also for sale since it combines its occupation of moulinier with that of pépiniériste, are grown without irrigation to better concentrate the aromas. The mill also hosts nearly 650 contributors each year (from 75 kg).
