Emmanuel Pala, a young, passionate artisan winemaker, works the 7 hectares of old vines, including Carignan and Mourvèdre, largely inherited from his ancestors, using traditional equipment. To preserve authenticity, and with quality as his constant objective, he harvests by hand and makes a strict selection of grapes. Vinification is carried out entirely by carbonic maceration. In the same wise process, the grapes are then crushed by foot. You'll find Cop wines at Coop, a stone's throw from the estate.
