Established in Lézignan-Corbières for almost 40 years, this artisanal ice cream maker produces almost 3,000 flavors of ice cream using traditional Maîtres Glaciers methods, in its own workshops. Each year, the company creates more than 1,500 custom-made creations for restaurants looking to turn original concepts into reality. Pôle Sud has gradually built its reputation on fine flavors based on spices, herbs, fresh fruit and desserts inspired by world cuisine. Its recipes are based on local, sustainable production, with particular attention paid to the quality of ingredients. Specialties include sorbets made with fruit from fruit cooperatives, and ice creams made with fresh milk from Marguerite's farm. The range includes atypical creations such as caviar or foie gras ice cream, as well as flavors inspired by French classics such as calisson d'Aix, nougat de Montélimar or madeleine de Commercy. The company also offers a selection of certified organic ice creams and sorbets, with flavors such as Bourbon vanilla, ewe's milk, raspberry and mango. Some recipes, such as Vanille aux Deux Vanilles and Café Blanc d'Éthiopie, are designed by Philippe Urraca, Meilleur Ouvrier de France. All products are manufactured without colorants, artificial flavors or preservatives. A factory outlet enables the public to purchase a selection of flavors packaged in 750-milliliter tubs.
