L'Auberge du Vieux Puits boasts 3 Michelin stars and is ranked second among the world's top 1,000 restaurants on La Liste 2024. Despite all these distinctions, Gilles Goujon knows how to keep it simple and does his shopping in Lézignan. His inventive local cuisine follows the rhythm of the seasons. It's hard to "narrate" his two menus, so surprising, refined and technically flawless are they. Let's just mention his signature dish: the carrus hen egg "rotten" with melanosporum truffle on a mushroom purée, warm briochine and drinkable cappuccino - exceptional!

Le chef est un homme charmant, accessible. Je l'ai trouvé à l'image de son auberge : simple et convivial.
Quant au menu, j'ai trouvé que tout était très bon. On est dans l'excellence du début à la fin.
Le personnel est lui aussi dans son ensemble très sympathique, professionnel.
Quant au terroir où se situe l'Auberge du Vieux Puits : MAGIQUE !
PS : si, comme un critique l'a écrit, vous sortez de ce lieu en ayant faim, courez vite consulter... un endocrinologue peut-être... ou alors un psychiatre !
