If you want to discover the products of the Aude region, while being sure of their quality, their origin and their production methods, welcome to the Pays d'Oc Farm! Located in the heart of town, opposite the tourist office, this showcase of excellence in Chaurian crafts and food products will let you discover the best of the Aude region. Here, the emphasis is on short circuits, since this delicatessen is a grouping of local producers and craftsmen, who put forward ancestral know-how in a concern for traceability and total quality.

Here in this long cellar in the center of town, we will advise you very well according to your viniphile sensibilities! We can't taste on the spot but we have never been disappointed by the proposals made... New references every week, whether the wine is natural, organic, or IGP or other red, white, or rosé wines but also regional aperitifs and spirits. You will also find references of cognacs at various prices, which will allow each budget to find the right bottle for his glass.

Jean-Christophe Tarrade has been delighting Chaurians for twenty-five years at Place de la République. In his workshop, the chocolatier likes to innovate, create, test flavour blends and unusual combinations that will surprise you. He's constantly pushing back the boundaries of gourmet creations, including the kouglof "soaked in syrup like Lenôtre used to make", the Chaurien (macaroon cookie with egg white and strawberry jam), and iced cassoulets.

Cellar and local delicatessen, this store in the center of Castelnaudary complements those in Villefranche-du-Lauragais and Castanet-Tolosan. Christophe Hernandez welcomes you amid the finest cheeses, charcuterie, preserves and spices available on the local market. It's a veritable Ali Baba's cave, showcasing the full range of French know-how! In the cellar, you'll find a fine selection of wines (mainly regional) and champagnes. Spirits from theregion rub shoulders with those from Ireland and Japan. Chez Christophe, it's good to be an epicurean!

For 53 years, the philosophy of the Grande Confrérie du Cassoulet has remained unchanged: to serve the prestige of Cassoulet, to spread and defend its reputation, and to ensure respect for quality. And to maintain the recipes of this culinary tradition, the Confrérie organizes unrivalled festive events around cassoulet: the Grand Chapitre in spring and the Fête du Cassoulet in summer! La Belle Chaurienne is aptly named. Established since 1964 in Castelnaudary, it is the main spearhead of the local gastronomic know-how. In addition to its famous cassoulet, the company has developed various recipes that showcase local cuisine. The ingredients for its preserves (duck confits, foie gras, pâtés, rillettes...) are 100% natural and carefully selected. Products that can be found in many food shops as far away as Hong Kong, as well as on the online shop.

The Comptoir des Vignes is the place to be for epicureans in search of good wines... but not only. We don't know where to turn as there is so much choice. Let's start with the wines, even if the department dedicated to the region has the lion's share, you can also find nice Burgundy, Côtes du Rhône, Bordeaux and even world wines. Large choice of beers, spirits, gin, vodka, champagnes and at all prices. Accessories, tea, coffee and wine in bulk complete the offer. The good reception and the wise advice of the cellarmen are appreciable.

Even if the historic store in the town center is still a must, the new store that has opened in the area is an invitation to indulge. In addition to its superb design, La Maison Escudier now offers a place to showcase its expertise and products: artisanal cassoulet cooked on site, available fresh in cassole, vacuum-packed, in jars or canned, a sausage library, artisanal charcuterie, foie gras...
