Located in the centre of Carcassonne, Maxence's delicatessen and deli store is a real eye-catcher, with its black facade and wooden lettering. In his open kitchen, the chef prepares deliciously presented dishes ranging from street food to modernised "grandma's" dishes: pork spider, potato and morel mushrooms, sardine rillettes, stuffed cabbage, beef cheek or lamb millefeuille. Every day, a new dish made with local, seasonal produce. A gourmet address to die for.
