The love of the land runs through their veins, and beyond being "wine selectors" they are also blenders and producers. They have opened a tasting, sales and exchange area in the heart of the bastide, highlighting the work of the most promising winegrowers, exalting the richness of the vintages unearthed. Entering the lair of the Cabanel house is to discover the Carcassonne of the 19th century with, in its courtyard, the superb ironwork marquee designed in 1868 in the Eiffel style. A historical place not to be missed, the place has inherited the secrets of the famous Micheline, a recipe dating back to the 4th century, and of the Or-Kina, a plant-based aperitif. It also produces a pastis 100% Carcassonne and the famous "Crème de Menthe" and "Crème de Citron".

A nursery for tomorrow's winegrowers with viticulture training courses, this establishment has opened a superb atypical cellar, with a monumental fresco on the vaulted ceiling, by the artist Harillo entitled "Al Vino, l'ode de l'Aude au vin". Cabernet Franc, Syrah, Merlot, Viognier, Chardonnay and Muscaris are produced and vinified on site in an ultramodern cellar, a real educational showcase for the students of the school.
