Worthy sons of Bacchus, Arthur Lallemand and Adrien Mingaud from Limoux transport us through their selection of wines into a universe of aromas and passion. The love of the land runs through their veins, and beyond being "wine selectors" they are also blenders and producers. They have opened a tasting, sales and exchange area in the heart of the bastide, highlighting the work of the most promising winegrowers, exalting the richness of the vintages unearthed. Local delicatessen products enrich their offer.

Entering the lair of the Cabanel house is to discover the Carcassonne of the 19th century with, in its courtyard, the superb ironwork marquee designed in 1868 in the Eiffel style. A historical place not to be missed, the place has inherited the secrets of the famous Micheline, a recipe dating back to the 4th century, and of the Or-Kina, a plant-based aperitif. It also produces a pastis 100% Carcassonne and the famous "Crème de Menthe" and "Crème de Citron".

We've been dreaming of a local beer with an Occitan name! Xavier Benoist has made it. A brewery engineer, he produces artisanal beers in Carcassonne, using French wheat, barley and hops. La Ciutat ("the city" in langue d'oc) comes in seven varieties: white, blonde, brown, Pils, amber, Ladies and Éphémère. Three local sodas round out the range, in the tradition of brewer-limonadiers, including the famous Carca-Cola (caffeine-free). Gift or event idea: you can choose your beer and have the label personalized!

The former Palais de la Micheline, a listed building, is now home to Vignobles Foncalieu. Upstairs, the Art Nouveau-style Belle Époque room is the perfect setting for wine events. The boutique offers around 70 products from the Foncalieu cooperative winery, plus spirits and local produce. Events, tasting workshops, privatization for seminars... And in summer, afterwork evenings until 10pm on Thursday evenings, with cheese and charcuterie boards.

Installed in the middle of an industrial zone, Sylive Garcia has brought a feminine touch to these places with a well thought out decoration and layout to highlight the excellent wines she offers. Her cellar is composed of multiple references, the best of regional wines highlighted, as well as nice bottles of Burgundy, Bordeaux and champagnes. The advice she gives is precious and will allow you to choose the ideal vintage. You will also find a wide range of beers, such as the Ciutat, made in Carcassonne.

A nursery for tomorrow's winegrowers with viticulture training courses, this establishment has opened a superb atypical cellar, with a monumental fresco on the vaulted ceiling, by the artist Harillo entitled "Al Vino, l'ode de l'Aude au vin". Cabernet Franc, Syrah, Merlot, Viognier, Chardonnay and Muscaris are produced and vinified on site in an ultramodern cellar, a real educational showcase for the students of the school.

Lovers of fine wines and LPs, you're more than welcome to visit Thierry Leduc's boutique! The concept is simple: a main selection of local wines, a few hand-picked national wines, and carefully chosen vinyls. A veritable treasure trove! The vinyls are new: "Vintage is good for the collection, but you can quickly be disappointed by the sound, so priority is given to the sound experience". Thierry also organizes blind tasting evenings once a week, and introduces you to a foreign wine once a month.

Stephen, an oenologist who has lived in the region for twenty-five years, recently trained in cheeses to open this concept store combining his two passions. Having travelled extensively in and around the Aude region, Stephen has built up an impressive list of small local producers. In his store, the oenologue Fromager offers a concentrate of gourmet delights, with a selection of regional products such as cassoulet, charcuterie, confit... Quality products and sound advice go hand in hand with ongoing tastings and introductory wine-tasting courses.

La Mosaïque des Vins is a superb initiative that makes the discovery of wine accessible to the inhabitants of Carcassonne and the surrounding area.
