Emmanuel Rey opened his beer-making workshop in the heart of the Haute Vallée de Chevreuse Regional Nature Park. Initially based in Bonnelles for 10 years, he moved to Le Perray-en-Yvelines in 2018. Proud of his local production workshop, he chose a deer - the emblem of the Valley - to illustrate his brand: Volcelest, or "Vois, c'est lui" in old French. The brewery has a boutique offering a wide selection of craft beers with organic labels. These are divided into a permanent range of 9 beers: "Regard de biche" white, "Cerf aux abois" blonde, "La Vie Sauvage" pale ale, "Sous-bois clairsemé" amber, "Soif d'évasion" triple, "Brâme du Cerf" IPA, "Haute Vallée" session IPA, "Harde Sauvage" double IPA, and "Entre cerfs et loups" Imperial Stout; complemented by two seasonal beers: volcelest de Printemps "Premiers bourgeons", a light, floral blonde available from March to May, and Volcelest de Noël, a sweet amber with spicy notes of coriander and orange peel, available from November to December. A few ephemeral collaborations are also offered for sale throughout the year to renew the range. All beers are unfiltered and unpasteurized. Volcelest also carries the eco-label "Trophée du Parc Naturel Régional de la Haute Vallée de Chevreuse". Last but not least, the brewery offers a beer tapping machine for hire, with a 30-liter stainless steel keg, for all your events.
