Definitely pretty damn good but I prefer Junk or Specimen burgers, just my personal view. Nevertheless it is still a good classic burger and also super cool simplified menu.

I wrote the below about the Petite Écuries branch, but it was so good that we went to the Pigalle branch two days later. It's slightly smaller with no bar to stand at and eat, but otherwise just as good.
Dumbo focuses on smash burgers. And they have refined that dish to it's pinnacle. The buns are buttery and light, the sauces are in the perfect ratio to everything else, as are the onions, the gherkins are sliced to the ideal thickness, the cheese is meaty and doesn't overpower. And the beef. Two patties of unctuous, fatty mince, smashed violently onto a hot plate until they are frilly, crispy and sweet. I can't imagine a more perfect demonstration of the Maillard reaction.

Un des meilleurs smash burgers de Paris ! Chez Dumbo, tout est simple mais terriblement efficace : une carte ultra courte, des produits bien travaillés, et un goût qui fait la différence. Le burger vege est déjà incroyable, et le goût grillé, caramélisé de la viande smashée du cheeseburger vaut à lui seul les 25 minutes d’attente. Les frites ? Ultra croustifondantes, addictives. L’adresse est prise d’assaut, et on comprend vite pourquoi dès la première bouchée. Une vraie claque pour les amateurs de bons burgers.

Best burger in town! The taste, smell and presentation was excellent! On top of that, the cashier/hostess Zaina's friendly smiling face and bubbly personality made my dining experience even more enjoyable!.

Bon … là on attaque un gros morceau.
C’est pas compliqué, je viens depuis l’ouverture y’a quelques années et j’ai jamais arrêté. Ça reste à ce jour le meilleur burger que j’ai goûté. Dumbo a été souvent copié mais jamais véritablement égalé. Les autres enseignes confondent « smasher le burger » (qui requiert une technique particulière pour caraméliser la viande) et écraser simplement le steak. Seul bémol, le service, le fait qu’il y’a souvent beaucoup de monde, peu voire pas de place assise selon le restau (il y a plusieurs chaînes), et ça les pousse à travailler sous tension et a pas forcément toujours être super sympas. J’adore Dumbo, donc je brave toute difficulté pour en avoir un à chaque fois, mais je me dois d’être honnête, même si ça fait un peu partie de l’expérience.

This is one of the best burger spots in Paris! For a smash burger everything is super good: the buns, the veggies and the cheese. What makes it another level is their homemade sauce, so so good. Also, the fries are so GOOD. You can see that they have a different technique compared to other spots and, honestly, it pays off. The vegetarian option amazed me and it was one of the best vegetarian burgers I had in a while.
The only downside is the place itself: the Pigalle spot is only take out and it takes at least 15 minutes to be ready (the queues are huge on fridays and weekends) and the Marais spot is small. Better cause you have the possibility to sit, but its small and they only have stools, no chairs. Also pretty busy at nights as well.

As an American this a a pretty good burger but it’s nothing out of the ordinary. Burgers aren’t hard The fries are a bit mid. Unless you’re an expat and you crave something that is good, you can skip this.

As an American and self-proclaimed burger connoisseur, I can attest that this was a fantastic burger. Well worth the price and short wait in line upon the storefront opening at 19:00. Quick service and most people go to the nearby square/fountain to enjoy their meal. Worth the hype in my opinion.

Par contre les prix… 10e le burger et 4e les frites c’est pas donné donné mais… d’un autre côté c’est tellement bon ????????
Ça dépend de l’heure à laquelle vous venez mais en général y’a quand même pas mal d’attente.

Great tasty smash burgers, the fries and nuggets were amazing. The house sauce was amazing but the sauce with the nuggets wasn’t my favourite as it was tangy, it depends on others sauce preferences. The only downside is there’s nowhere to sit and eat close by.
