No matter what cheese you are looking for, there will be something to satisfy all the gourmets: in its magnificent cellars dating from the th century (which the curious can visit on request), are refined specialities from almost all regions of the Hexagon: Isigny's pie, saint-nectaire, tomme of Savoy, brie de De, blue of Auvergne, Chèvre goat, tomme of Corsica; gaperon (a delicious pepper-based creusois cheese), ossau-iraty, chabichou and many more unknown like the surprising southern-saint-stone, or the etivaz, a Swiss original Gruyère cheese that few cheesemakers sell.
