3-star restaurant offering refined, elegant, traditional, and no-frills cuisine, including spicy dishes
A legendary address in the Marais, L'Ambroisie remains a jewel of French gastronomy, now in the hands of chef Shintaro Awa, the successor chosen by Bernard Pacaud himself. In this confidential, timeless setting, every detail exudes elegance and emotional precision. The cuisine, faithful to the spirit of the house, combines great French tradition with contemporary sensibility. Each dish bears witness to a perfect mastery of produce and cooking techniques. Dessert creations are of rare precision. L'Ambroise is the promise of a suspended moment, between heritage and renewal, to be experienced at least once!

The food was delicious, and we really enjoyed it. However, only two of the staff members provided good service, while the others spoke very quickly and did not seem interested in properly understanding our needs or concerns.
When it was time to pay, the server brought us the bill, and we noticed an extra charge for a bottle of red wine (€180). When we pointed it out, the server did not provide any explanation—whether it was a mistake or a mix-up with another table. They simply brought a corrected bill and the card machine for payment, without any clarification or apology.
Overall, the service quality was inconsistent. The staff did not seem to consider customers’ dietary restrictions and instead focused on aggressively upselling dishes and alcohol. We believe that a Michelin three-star restaurant should not have this level of service.
