The team behind Bouillon Pigalle has doubled down with Bouillon République. Here you'll find all the ingredients that made their first address such a success: good, traditional dishes (eggs mayonnaise, sausage-purée, roast camembert, cauliflower gratin...), quality products and a (very) lively atmosphere. The only major differences are the number of covers (450 here) and the décor, the designers of this Bouillon République having retained the woodwork and marquetry panels of the former Chez Jenny brasserie. Thank goodness!

Bouillon has realised a great formula. Classic French dishes at a price that ensures their restaurants are always packed & buzzing. Service is generally smart & efficient but can also be chaotic - our experience was that you can expect the main you order but sides and drinks may get mixed up or arrive a little en-retarde. But if you're after a buzzing vibe and waiters dancing around with huge platters of classic French food this is a great place to visit.
Tip - Bouillon is often fully booked days in advance but does accept walk ups. Visit mid afternoon to beat the evening rush and queues

Le meilleur bouillon parisien dans lequel j'ai pu passer. Rapport qualité-prix excellent, comparé aux autres bouillons on est moins serré et on profite plus de son repas. Accent sur la quantité qui est vraiment généreuse. Un menu oeuf meurette, demi-jarret frites vous coûtera moins de 20 euros et ravira un grand mangeur (le dessert sera vraiment de la gourmandise). Service très aimable, bref carton plein, on comprend l'attente qui est justifiée pour la qualité du service.
