Absinthe continues to have the upper hand on Place du Marché-Saint-Honoré. The decoration remains very fashionable: a chic Parisian bistro and small touches of industrial decoration in the spirit of a New York loft. The first floor of the restaurant can accomodate large tables from 8 to 14 people, you can make it entirely private starting from 20 people. The cuisine is maliciously stamped local but revisited. To be convinced of this: gazpacho of red beetroot, fresh goat's cheese and olive oil or scad ceviche, ginger, basil, fine pea purée, fresh green vegetables and tobiko eggs then, grilled chicken paillard, crunchy salad, Greek yoghurt and coriander or black seabream à la plancha, fine pea purée, fresh herbs, mustard zabaglione. Finally, small jars of chocolate cream by Michel Rostang (with a 2 cl glass of absinthe liqueur +€3) or fresh red fruits, yoghurt sorbet and crispy meringue. It is a beautiful bistro journey. The signature of the Rostang dynasty is behind all that.
