Restaurant with a hushed atmosphere offering an inventive and very precise cuisine.

Jacques Faussat welcomes you with the warmth and bonhomie of Gers. He is a star leader, he keeps his simplicity: as is good in Paris! Especially for a chef who has such an impressive career… After obtaining a cookery CAP as well as that of pastry pastry-confectionery-chocolate maker in Tarbes, in 1982, he won the "Best apprentice in Southwest" competition. He then travels to France in prestigious establishments such as the Ripa Alta, Fouquet's, the Prés of Eugénie or Trou Gascon. In 2002, he bought La Careful restaurant in the 17 th arrondissement of Paris, which he decided to change from his own name, and he was elected best chief of the year. In 2004, he was awarded his first Michelin star.

Although very attached to his Gers, he is inspired by the sun kitchens, where he has already exercised his art, particularly Spanish, Italian or Moroccan cuisines. His taste for spices married to an inventive and very precise kitchen allows him to flirt with the most subtle balances. Taste is omnipresent and in the plate flavours blend with the colors of the dishes. We recommend especially, in entry, Marenne oysters in seawater jelly and liver/smoked herring/egg in curry, flat perch roasted on skin, white asparagus of Bay and young leeks. As for dessert, we've melted pleasure with the mango soufflé and its mojito grout. On the wine side, Jacques Faussat's wine-maker made the choice of producer wines always fair and perfectly adapted to the plate. On the atmosphere, lovers of good dining will appreciate the calm and the discretion of the places. A cosy atmosphere and well spaced tables to preserve the privacy of everyone. A very good address, where grandeur, simplicity, refinement and subtlety lends itself perfectly to all levels and to the base of course.

Had an exceptional lunch at Jacques Faussat — beautifully executed dishes, perfectly paired wine, and warm, attentive service. Compliments to Chef Faussat for the exquisite meal, and special thanks to Sophia for making the experience even more memorable.

母の初めてのパリ旅行の最終日のお昼に利用しました。
ミシュラン一つ星とのことでサービスもお食事も最高でした。フランス料理はやはりソースに気合いが入っていて、プレゼンテーションも良かったです。
お昼のコースは60ユーロとお得で、ワインを1人2杯ずつ頼んで1人100ユーロほどでした。ワインもお料理にあったフランスのものを紹介してくれ、とてもおいしかったです。

2人で行く方は、コースの前菜、メイン、デザートとそれぞれ2種類なので別のものを頼んむと一層楽しめると思います。

A perfect lunch this afternoon with my wife at Jacques Faussat. Felt a bit guilty as we were the only two left in the restaurant at the end of the meal. This place should be crowded all the time. My wife and I each ordered the regular 3-course lunch menu, substituting one of the house specialities for a regular item. All the courses were outstanding. The pigeon was beautifully made tableside and was a mix of finger food and various other parts of the bird. The take on the tart tatin soufflé was the best dessert we have had in France (and there are many good desserts). The service was perfect and we were honoured that the chef was involved in our wine choices and with our full enjoyment of the meal. Merci and thank you! Cannot wait to return when back in Paris.
