The Chiron House, well known on the Boulogne markets, was picked up by one of the employees who deleted the name to become the Artisan Tripier. Laurent Chiron has therefore passed his hand, but he has transmitted his know-how, his love of quality and tradition. Tripe today doesn't feed his man anymore, he has diversified his products (beef tab, sausage in Guérande salt, etc.) but we still find the guts, kidneys, liver, ris or head of calf, the haché of the tripier and many others.
