LA FERME DU VIEUX CHEMIN

The vineyard slopes of this farm near Salins have given way to a goat farm. Céline Nicole installed it in 2012. The farm has 200 heads and cows on 60 hectares. In terms of finished products, the cheese maker focuses on goat and cow specialties, half-goat, dessert creams, faisselles, feta, and Salins salt water tome. But flavourings also come into play: green cheese with fir tree liqueur, goat's cheese with wormwood, paprika-chocolate, chestnut, green tea, spirulina... All of which can be confusing at first, but you'll soon get used to it!
