For some thirty years, the Mattei family, parents and sons, have been making traditional sheep's and goat's cheeses. The milk is collected every morning from around twenty producers on the eastern plains and in the Castagniccia region, before being transformed into various soft cheeses and brocciu. A filetta means "fern" in Corsican, and with good reason: a hint of fresh fern is added to each cheese as a signature. You'll find an online store and great cheese recipes on the website!
