Alessandro Ciurlia-Capone is an Italian who grew up in Corsica. His good idea: make Italian cuisine with Corsican products. The dishes are refined and elaborate. Meat and fish are given pride of place, but it's the homemade pasta that catches the eye. For dessert, traditional chocolate fondants, tiramisus or crumbles are a must. In summer, the chef's floral ice creams with elderflower and wild lavender are particularly appreciated. Good value for money!
