SYNDICAT DE DÉFENSE ET DE PROMOTION DES CHARCUTERIES DE CORSE SALAMERIA CORSA
The Syndicat de Défense et de Promotion des Charcuteries Corses "Salameria Corsa" is a professional organization primarily for breeders-processors of traditional Corsican charcuterie. It is the official body recognized by the INAO and is responsible for the defense and management of the three AOCs obtained in 2012: Jambon sec de Corse - Prisuttu, Coppa de Corse - Coppa di Corsica and Lonzo de Corse - Lonzu. These AOCs are the fruit of long and painstaking work by breeders, with the support of local technical and financial partners. They represent recognition of the region's centuries-old pastoral and butchery know-how. The products are linked to the terroir, thanks to the "Nustrale" breed of Corsican pig, free-range rearing, finishing with acorns and/or chestnuts, and traditional processing methods. The Syndicat is proud to pass on and promote this tradition, and invites visitors to discover the typicality and quality of traditional Corsican charcuterie products.
