The vegetables are at the customer's choice. The staff is half professional but also in training. A little something extra: you can participate by rounding up your bill, with the "suspended meal": the principle is simple, you pay for a coffee, an extra meal, and it is added on a slate. Anyone who can't afford it will benefit.
