Having fallen in love with the Périgord Noir region, Chef Thibault has settled in Hautefort, where he happily welcomes his customers to discover the local produce. His cuisine is based on creative, personal interpretations of tradition: crispy soft-boiled egg with glazed turnip, double fillet of sea bass with cauliflower mousseline, or for dessert, apple and pineapple brunoise. The setting, like the cuisine, is efficient, with a modern bistro style that rejuvenates the traditional beams. Our favorite is the à la carte Troubadour burger!
