New morning at Ilulissat. How lucky I am! I enjoy Danish pastries at breakfast watching icebergs. I can't get used to writing that. Icebergs for breakfast. Greenland for breakfast. My mind lists all these combinations when I see Søren and Marie-Louise for breakfast. Oh, yes, one more! Ah ah ah! They took off on my evening and I asked them how they were. Naan…! Listening to them, I realize I missed the most beautiful boreal aurora ever! There was even a touch of purple in it! They saw her from the window of their room! Really? But at what time? Oh, I was at the bar and then in bed. A few seconds before, another bad news fell on me. Ole Dorph, the mayor of Oqaatsut told me that we could not sail to the small village this morning as planned due to bad weather. We'll see the chances tomorrow morning, he'll call me later today. I continue to enjoy Danish pastries while watching icebergs. I'm in Greenland, nothing negative can reach me, it's impossible. ➧

 

The group goes hiking, I stay at the hotel and write postcards, dream, wait for the phone call hoping for a green light for tomorrow. Going to Oqaatsut is an important part of my Greenlandic dream. This hamlet has been in my mind for months and months… I didn't imagine going to Greenland without setting foot there! Hours pass, no news. I'm calling. Ole tells me he'll call me back at 6:00. That is the group that comes back. The sky is gray for the first time since we arrived. " Hello friends, so how was hiking? " " Søren and Marie Louise inform me that I booked a table in Mamartut tonight after hearing about the restaurant. " Well! I am surprised and happy to hear that. What if I go with them? Marie-Louise reads the thought that crosses me. Would you like to come with us? " I would be very tempted, "I replied with a smile to the ears and an expression of the most greedy on my face. " Okay, let's go together, add me to your reservation, I'm looking forward to eating there again. " " ➧

 

A few minutes before my appointment with Søren and Marie-Louise, the receptionist of the hotel tends me to the phone. This is Ole. I catch the combined by crossing the fingers (yes, with the same hand, ladies and gentlemen!). We will sail tomorrow! SAIL TO OQAATSUT!! I'm a happy siiiiii. I want to kiss Ole and the receptionist. Søren and Marie Louise. I'm telling them the good news. They are truly happy for me even if that means that we will have to say goodbye tomorrow morning. Let's take advantage of our last night together. When we arrive in Mamartut, the Danish couple is seduced by the warm appearance of the place. I'm glad they like it. They are intrigued by my trip to Greenland, which differs somewhat from their own. My friend gave me a very nice program with a culinary touch and particular attention to local life. I tell them that people do not think "restaurant" when they think about Greenland, they think essentially "icebergs" and "aurores boreal." They're acquiescing. They would never have imagined that kind of restaurant here. In my view, this island is in fact the ideal place. Animals (reindeer, muskox…) live in freedom, we are beyond bio. You can't have better products. No pesticides, no antibiotics, we don't even remember the taste that it has without these awful things. Fish are not packed in huge basins as in Norway, their flesh is so tender, the berries are picked by hand in the mountains as well as the leaves of angelic. Here, people still live in fishing and hunting. Greenland has a taste for freedom. In a few years, Greenland is a destination that will count in the world of gourmets. I bet that. I feel that energy and love for the good products. The Greenlanders don't have a gastronomic culture yet, but it's coming. They have always eaten healthy and good food. Look at what happened in Denmark with the talented René Redzepi. The same thing will happen in Greenland. Who will be the man or woman at the head of this movement? It will be interesting to follow.

 

Søren and Marie Louise are amazed at my passion for Denmark and the Danish language. Then their decision is taken. Dinner will take place in the original version without subtitles. Ah ah ah! Hard to follow, but I love it! I recommend them the delicious kir and I opt for the whale carpaccio once again. Søren and Marie Louise choose an Italian red wine. I'm curious and dying to taste it. So we order a bottle. I like the freedom of the chief, he's not snob at all. For him, accompaniment to the whale with this Italian red wine is no problem as long as we love red wine. Let's try! There's one thing I'm doing in this world. test! Wine is divine. Well done, my friends, very good choice. I see that food is as important to them as to mine. We would have a lot. They speak in Danish, I answer in English. We would be more beautiful. I do not know yet but the choice of dessert will prove to be the most arduous part. Marie-Louise cools me to order with a perfect Danish accent my «Pandekager med orangesauce og iscreme». But the worst is coming with his dessert named: " Æbler bagt med kanel og hasselnødder serveres med vanilje ". Pfiou! She's an extension, but she's a good teacher. Søren takes my camera and records the scene. Oh, my God! Oh! Finally, the chef understands my request and each one gets the right one on his plate. They smear me and talk about posting the video on Facebook or sending it to my Danish friend. Ah ah ah! I'm so upset. Luckily, soft and melting crepes make me forget the threat. Another wonderful evening in Greenland. We leave the restaurant and salute the chef. Outside, it's the snowstorm! The road is slippery and we fail to fall. Our laughter emerges in the night. No aurora, but the sweetest sound ever!
