Rochefort 6, Rochefort 8, Rochefort 10 There are three versions of this admirable Trappist beer: the 6, the 8 and the 10. Rochefort 10 is the most celebrated; Rochefort 6 is the rarest, sold mainly in shops near the abbey; Rochefort 8 is the most widely available.Production has doubled in recent years to meet the strong growth in demand, both in Belgium and overseas. 26,000 hl were produced in 2010. The whole brewing process, including the bottling, takes place inside the abbey walls.The brewery is the abbey's main economic activity, but for all its success, its role remains one of supporting the monks' main devotional activities. The abbot himself has said that the abbey is first and foremost an abbey, one of whose activities is brewing beer.The abbey, or l'Abbaye Notre-Dame de Saint-Remy (to give its full name), is about a mile (2 km) from the Ardennes town of Rochefort, halfway between Brussels and Luxembourg. It has been on the site for centuries and there is evidence to show that monks started brewing Rochefort beers as long ago as the 16th century.The brewery is not open to visitors, but the services at the abbey church are open to all.

Philomène Florale, a light blonde (5.5% vol. alc.) was born in 2015. One can even say that it was born in the desecrated church of Piroy in Malonne. In 2017, it was followed by Philomène Hoptim'Ale (7.2% vol. alc.) then Cointessence (8.3% vol. alc.) and finally Céleste, recently. They are surrounded by ephemeral brews. As a 100% traditional brewery, all the stages from production to bottling are managed on site. The bell, dedicated to Philomène, was cast in Tellin. In addition to the production of the brewery La Binchoise that he manages, he brews a blonde Brogneand a Spéciale Noël, both organic. The abbey has a hotel-restaurant, reception rooms and a vineyard. The Barley wine is a triple, organic like the rest of the range. In limited quantities (3,000 copies), it is only available on site and in a few shops.

Super des Fagnes Blonde, Brown, Cherry, Food

The Brasserie des Fagnes as we see it today, with its imposing tavern and the curious roof flanked by a windmill, opened its doors in April 1998. After a series of péripéties, it succeeded a certain Brewery Lauvaux, installed in Couvin in 1903 by Constant Lauvaux, also… world champion champion in 1901 and 1902. The Super des Fagnes Blonde and Brown are the most famous beers of the house, with their version Super des Fagnes Cherries.

But, the limited capacity of the mariembourgeoise micro-brewery, they are prepared by the Brasserie brewery in Purnode. On the other hand, the fagnard brewer gives himself a joy to develop in His walls a rich range of brassins, often inspired by ancient recipes. This goes from wise season, White, four cereals or even Type Munich, to more astonishing Cuvée Vigneronne, Cuvée Junior, Cuvée Guillaume to apples or even Mint and Lemon beer, dirt, heather flower…

Three other vintages are constantly being developed: the Super des Fagnes Noël and Scotch, and La, born of a partnership with the provincial domain. All these beers can be tasted in the tavern, which also offers the free visit of a small beer museum. It brings together equipment of a century and a half, but well preserved, from the defunct brewery Degauquier, which had installed its vats in Chimay.

The Mochenaire beer, available in Little One, Blonde and Home'S Black, was developed by Jean-Paul Delbrouck, in collaboration with the Jandrain brewery where it is currently brewed. The credo of its creators, who tested the market and took the time to let their product grow before creating their micro-brewery, is "amateur but professional". Their fermentation capacity is only 5.5 hl! Intended for an ultra-local market (a few retailers and cafés), they are nevertheless true tasting beers.
