The Nougalet chocolate and confectionery factory welcomes you to its 6,000 m² factory dedicated to gourmet delights. Much more than just a chocolate factory, Nougalet has been renowned for its exceptional expertise for over half a century. Here, raw materials are rigorously selected for our greatest pleasure. Founded in 1936 in Limoux, Maison Bor is a renowned nougat maker. The factory has since been taken over and enlarged, and Maison Bor has set up shop on Place Carnot in Carcassonne. Here, at any time of day, you can enjoy one of their wonderful home-made pastries, accompanied by one of the 14 different teas on the menu, or one of the 10 exclusive herbal teas. The fast-food area at lunchtime lets you sample local produce and Aude wines, and you can sit out on the terrace in all seasons, thanks to the soft plaids on their deckchairs...

The window display really makes you want to window shop with fresh individual pastries, tarts and desserts like the Café Créole (almond cookie, dark chocolate iced coffee cream, light vanilla cocoa cream and banana caramel tips) or the Cocomango (like the café créole but with a mango variation). Pastry chef Rémi Touja, French dessert champion in 2013, opened his workshop in the Bastide, after working alongside chef Franck Putelat. He offers tasty, refined and original pastries, which are also true works of art. The Paris-Brest revisited with buckwheat, the "Choco" cake with peanut and nougatine brownie, the delicacies to nibble or spread, the chocolate bars and other fruity sorbets... Rémi Touja's pastries will delight your taste buds.

There's a before and an after when you taste bread and pies from Tout autour des Moulins. Everything is delicious, and the indulgence seems to do us good because there's little sugar, quality local flour, and a project of educational workshops that makes you want to come back. The team's aim is to promote respectful, quality agriculture by offering organic, sustainable bread and flour. As part of the social economy, the team has received social utility accreditation for its production building and bakery.
