The three Hattier sisters, Catherine, Valerie and Sophie took over the parent company on the August 24th. Third generation to perpetuate the reputation of the institution, this boucherie-chacuterie selects the best farm animals in the region: calves and lambs of the Yonne, rabbits, guinea fowl and icaunais chickens as well as Charolais beef of Saône-et-Loire. parsleyed ham, black pudding or terrine, mousse of chicken liver, all the chacuterie is homemade from A to Z with fresh products. Amongst the hits, is their famous black pudding, white ham cooked in broth or hand-tied andouillettes sausages (it takes three days of production) and cooked in Chablis style.
