The three Hattier sisters, Catherine, Valerie and Sophie took over the parent company on the August 24th. Third generation to perpetuate the reputation of the institution, this boucherie-chacuterie selects the best farm animals in the region: calves and lambs of the Yonne, rabbits, guinea fowl and icaunais chickens as well as Charolais beef of  Saône-et-Loire. parsleyed ham, black pudding or terrine, mousse of chicken liver, all the chacuterie is homemade from A to Z with fresh products. Amongst the hits, is their famous black pudding, white ham cooked in broth or hand-tied andouillettes sausages (it takes three days of production) and cooked in Chablis style. Ma charcuterie habituelle et préférée !!! Le boudin noir dégusté chaud au marché ou en boutique est exceptionnel, mais j'ai un penchant pour les langues de porc vinaigrette, le persillé et le saucisson à l'ail. Tout est bon dans le cochon, mais surtout lorsque c'est préparé par les soeurs Hattier ... Il faut accepter de mettre un peu le prix pour bénéficier de produits de cette qualité.
