Founded in 1867 in Yuzawa, this house has been perpetuating the art of fermentation for over 150 years, producing miso and soy sauce from the pure waters and rice of Akita. In 2018, its activities expanded to include a café, an art gallery and tours of its factory, to discover how miso and soy sauce are made. The experience continues at the ASTRONOMICA restaurant, for an experimental and poetic culinary approach. In the evening, the meal can be combined with a tour.
