The numerous underground wine cellars in Torquemada are a veritable labyrinth, and the number of wineries is estimated to be more than 500. Built between the th and th centuries, they testify to the historical importance of wine in the region. Its most emblematic bodega, De de Valdesneros, offers a good example of these underground wineries.
