Seasonal cuisine from chef Philippe Gervais in an unusual restaurant with terrace in Colmar
This unusual restaurant is located in an old stable nestled in the heart of the famous "green lung" of Colmar. To get there safely by car, it is advisable to go through the rue de la Semm and then take the rue des Aubépines. When the sun shines, it is a pleasure to have lunch on its shady terrace overlooking a bucolic garden and a playground for children. An inventive and intuitive cook, chef Philippe Gervasi trained with Paul Haeberlin (Auberge de l'Ill) and the late Paul Bocuse. In addition, Philippe worked for 5 years in Jean-Yves Schillinger's Destinée restaurant in New York. At the helm of the Auberge du Neuland for the past 20 years, Philippe Gervasi combines visual pleasures and gustatory mastery with succulent dishes to be discovered according to his favourites, which vary according to the seasons.
